Intermediate Russian: Blini & Syrniki

This week we’re celebrating Maslenitsa – an Eastern Slavic religious and folk holiday, celebrated during the last week before Great Lent, that is, the eighth week before Eastern Orthodox Pascha (Easter). Maslenitsa is probably the oldest Slavic holiday. The most characteristic food of Maslenitsa is blini, and today I’d like to tell you (and demonstrate!) how we cook blini (and syrniki as well). We cannot cook very well but anyway… please don’t be too strict with us 🙂
Blini Recipe
Ingredients:
- 2 cups of milk
- 2 eggs
- 1T sugar
- 1/2t salt
- 2 cups of flour
- 2T vegetable oil + more for oiling the pan
Instructions:
1. Whisk eggs, milk, sugar and salt
2. Add flour slowly
3. Add oil
4. Let it rest for 10 minutes
5. Preheat the pan, put a little bit of oil and scoop the batter into the middle of the pan. It shouldn’t be thick. Slide it around the pan. Fry the pancake for 2-3 minutes on one side and after that on another. The first blin will probably not look very nice, but that is normal.
